About Beef Shares:
How much does a beef share cost?
We charge $4.50/lb Hanging Weight (subject to change based on feed prices).,
Rough Estimates are
Whole - $3,600
1/2 - $1,800
1/4 - $900
These are estimates of what to expect, but it may be a little more or less based on the weight of the animal.
How much freezer space will I need?
On average, 35-40lbs of meat will fit into 1 cubic foot….
1/4 - around 3-4 cubic ft
1/2 - around 7-8 cubic ft
Whole - around 14-15 cubic ft
But I do recommend getting a freezer bigger than what you think you need... because next year you'll probably order a half instead of a quarter, or a whole instead of a half. Think I’m kidding? Ask our previous customers! 😉
Will my beef be vaccuum sealed?
Yes. That is included in our price.
When can I expect my beef share to be ready?
Your beef share will be ready 2-3weeks from your processing date, which I assign to you when you place your deposit. Shares are first come first serve and usually booked several months out.
Where is the pickup location?
The pickup location for Beef Shares is at Trackside Butcher Shoppe located in Campbellsburg, KY.
Do I need to bring coolers when I pick up my beef?
The beef is vacuum sealed, frozen solid & packed up into large heavy-duty bags (about 50 lbs for each bag) that the Processor will load into your vehicle. If you’re not traveling far I don’t think that coolers are necessary... BUT it is completely up to you to make that call.
We are not responsible for any weather or traffic-related issues causing anything to thaw.
How much ground beef will I get?
50-60% of your beef order will be ground beef. Any cuts not selected will be turned into additional ground beef. Example: If you don’t select Ribeye Steak or Ribeye Roast it will be turned into ground beef, and that would be a sin.
About the Purchase Process:
What is a Custom Cut Sheet?
(Applicable to Whole & Half Shares only)
This is the sheet that you will fill out to customize your beef share and select the cuts that you want. It allows you to select options like roast size, steak thickness, steaks per package, extras such as kidney fat (for tallow making).
1/4 Shares (and any cut sheets not filled out) come "Butcher's Choice", which means we have worked with Trackside to come up with a standard selection of cuts that you will recieve.
What are "Additional Cuts"?
Additional cuts are things like the Brisket, Short Ribs, Flank Steak, Skirt Steak, Soup Bones, Organ Meat. THESE ARE INCLUDED in your price and do not cost extra, but you can take them or leave. Any cuts not selected will be ground up.
TIP: Have dogs? They will thank you for the heart, tongue, and anything else you can’t “stomach”.
When do I fill out my cut sheet?
Option 1: You will receive an email with the cut sheet a few days prior to dropping your steer off at the processor. You will fill it out online and it will go directly to the processor’s email.
Option 2: You are more than welcome to call the processor and they will fill it out over the phone with you. This is a good option if you’ve never bought a beef share before and have newbie questions. They have excellent customer service and are more than happy to assist you with this!
What size roast should I get?
The most popular roast size is 3-4 lbs. I also like this size, because it ensures that I have some for leftover lunches. That’s a win in my book!
How thick should I get my steaks?
This is completely up to you. For my family, we do 1 inch thick. I don’t recommend getting them any thinner than 3/4in unless you want a one-sided steak. You do you!
Note: filets come as a standard 2-inch thick, regardless of what you select on the others.
How many steaks should I get per package?
This is also a personal preference and depends on how many you want to thaw at a time.
Additional charges will apply if you select 1 steak per package, due to packaging costs. Besides, they’re like potato chips, you can’t cook just one.
🍔 Don't know what to do do with all that Ground Beef?
I've got you covered! We know it's a lot fo ground beef, BUT you have options!
Our processor has the option to get pre-pattied burgers (1/3lb or 1/4lb) and they also have several flavor options for Beef Brats. If you've never tried them, they're the bomb. Beef Brats > Pork Brats hands down.
Each flavor requires a minimum of 25lbs.
THESE ADD-ONS ARE AN ADDITIONAL CHARGE, but also, ones that I highly recommend and that most of our customers take advantage of.
You will have plenty of ground beef, so go ahead and treat yourself to a little convenience!
